You’ve heard of tequila but have you heard of Sotol? Raicilla? Mezcal? Let us give you a brief breakdown of each!

In order to be called Tequila, the spirit must be produced in or around the area of Jalisco, MX. Tequila has strict regulations on how and where it can be made. Some of the best tequilas are 100% blue agave. Blue Weber Agave is typically harvested after 6-8 years. Then they roast, add water, add agave, add yeast, ferment, distill 2-3 times, then age. Aging is usually done in bourbon barrels. Typically smooth and sweet.

Sotol is only made from wild harvested agave plants in the region of Chihuahua which makes this plant organic and grown without fertilizers or pesticides. Sotol (the name of the plant AND the spirit) typically takes 12-15 years to reach maturity and the average yield per plant is one liter. Production is similar to tequila. Sotol tastes “bright and grassy”, sometimes sweet and fruity.

Raicilla tastes a little sweeter and fruitier than tequila or mezcal. Raicilla is distilled in coastal towns and villages in and around Jalisco (like Puerto Vallarta and El Tuito). It is made from two varieties of agave – lechuguilla and puta de mula.

Mezcal – Tequila is a type of mezcal and mezcal is smokier. It’s the over arching category and is made from several agave plants. #NowYouAreATequilaPro
